This tutorial shows you how to gain more controls while using select tool.

While moving a control point of the curve, another control point will be in the same line as the moving one by default, to just move one control point, press Option while moving.

Points guiding is working to help you easily align points, press Control to disable guiding while moving a single point, release Control to enable points guiding again.
